CAULIFLOWER-RICE LETTUCE WRAPS
There’s nothing better than keeping your blood sugar stable- to feel your best, maintain your weight, your moods, great skin, and your energy levels. Substituting cauliflower for rice is a simple and unbelievably tasty option, especially for someone trying to a paleo, primal, or even vegetarian style diet. Of course- gluten-free, grain-free, refined sugar-free GOODNESS for your belly!
1 Head Cauliflower, chopped into large chunks
1 Cup (roughly) bagna cauda dressing
1 onion, finely chopped
1 Cup diced tomatoes
fresh basil leaves, torn (to taste)
Using a Blender or food processor, blend cauliflower until it has a shaved, or rice-like appearance, or desired texture.
In a large pan, saute onion in enough water to barely cover until lightly browned. Add cauliflower & bagna cauda dressing. Mix well. Add diced tomatoes. Mix well. Heat until warmed to your liking. Add fresh oregano, salt & pepper to taste. Remove from heat. Sprinkle fresh basil. Mix until wilted.
Options:
- Serve with butter lettuce as a lettuce wrap.
- Add fresh fresh oregano, thyme, or other herbs of your choice.
- Serve with protein of your choice: light, white fish, chicken breast, turkey meatballs, or mix with other ground meat of your choice.
